Vegan Blueberry Muffins

The Breakdown: 

Serving Size (6 muffins)

  • Whole Wheat Pastry Flour - 1 cup
  • Rolled Oats - 3/4 cup
  • Blueberries - 1 cup
  • Unsweetened Plain Almond Milk - 1/2 cup
  • Unsweetened Apple Sauce - 1 cup
  • Natural Peanut Butter - 1/3 cup, melted
  • Maple Syrup - 1/2 cup
  • Vanilla Extract - 1/2 tbsp
  • Cinnamon - 1/2 tsp
  • Baking Powder - 1/2 tsp
  • Salt - 1/2 tsp.

 

How to: 

1. Preheat oven to 400 degrees

2. Mix flour, oats, baking powder, salt and cinnamon in large bowl

3. In separate bowl mix blueberries, almond milk, apple sauce, peanut butter, maple syrup and vanilla extract

4. Add the wet ingredients to dry ingredients thoroughly mix

5. Spray muffin sheet with a nonstick spray and gently pour mixture into sprayed sheet pan

6. Once oven has reached 400, place sheet in oven for 15 minutes

7. Remove sheet from oven and with a knife, lightly tap along the perimeter of each muffin - making sure that muffin easily can be removed from sheet pan

8. Place muffin sheet back in over for 5 additional minutes at 400 degrees

9. Remove from oven, let muffins cool and then remove from tray

10. Try having just one :)
