The Breakdown: 

Serving Size - 2

For the Tempeh:

  • Tempeh - 1/2 of 18 oz. package, sliced in strips
  • Hot Sauce - 1 tbsp
  • Soy Sauce - 1 tbsp
  • Apple Cider Vinegar - 1/2 tbsp
  • Agave or Maple Syrup - 1/2 tbsp
  • Cumin - 1/2 tsp
  • Chili Powder - 1/2 tsp
  • S&P

For the Sandwich:

  • Roma Tomatoes - 2, sliced and lightly salted
  • Butter Lettuce
  • Ezekiel Bread (or bread of choice)

 

How to: 

1. Preheat oven to 300 degrees

2. Slice half of the tempeh block into long strips (similar to bacon strips) and then place in deep baking dish

3. Mix all ingredients for the tempeh marinade in a cup and then pour of tempeh, flip to cover both sides and set aside for 5 minutes

4. Place the tempeh strips onto baking sheet and place in oven for 10-15 minutes and bake until brown and then flip and bake for additional 5 to 7 minutes

5. Cut the tempeh strips in half and begin assembling sandwich

6. Add vegan mayo to both bread, followed by lettuce and then tomato, tempeh and so on to create a club sandwich
