Sweet Potato Hash

Sweet Potato Hash

The Break Down:

(Serving Size: Approximately 8)

  • Sweet Potatoes - 3 Large, diced

  • Sweet Onion - 1 large, chopped

  • Garlic - 8 cloves, minced

  • Onion Powder - 1/2 tbsp

  • Garlic Powder - 1 tbsp

  • Thyme - 1 tsp

  • Paprika - 1 tsp

  • Cilantro - 1/3 bunch, chopped

  • EVOO - 1/4 cup

  • Unsalted Butter - 1 tbsp

  • S&P

How to:

1. Preheat oven to 450 degrees

2. Mix the onion powder, garlic powder, paprika & thyme in a bowl and then toss with the potatoes

3. Drizzle the potatoes with EVOO and sprinkle with salt and pepper, then toss once more with hands

4. Place on a large sheet pan and then in the oven for about one hour, tossing the potatoes every 15 minutes or so, to avoid burning and ensuring that they evenly cook

5. About 10 minutes prior to the potatoes being done, in a large, deep saute pan add a tbsp more oil over medium high heat - then add the the onion, along with the minced garlic and a pinch of salt

6. Stir the onions and garlic, stirring frequently until the onions have softened and begin to bronze - then turn heat to low

7. Remove the potatoes from the oven and carefully scoop the potatoes into the large saute pan where the onions are, then add the butter and chopped cilantro

8. Mix until the butter has melted and spread then transfer hash to a plate and serve
