Power Pancakes

Power Pancakes

The Breakdown: 

Serving Size - 6 pancakes

  • Rolled Oats - 1.5 cups
  • Chia Seeds - 1/4 cup
  • Sweet Potato - 1 large
  • Overripe Banana - 1, mashed
  • Dark Chocolate Chips - 1/2 cup
  • Egg - 1
  • Vanilla Extract - 2 tbsp
  • Cinnamon - 1 tsp
  • Nonstick Spray or Unsalted Butter

How to: 

1. Wet a sweet potato and then pierce with fork and zap in microwave for 7 minutes

2. In the meantime add the rolled oats, mashed overripe banana, dark chocolate chips, cinnamon to a large bowl

3. Once the sweet potato has cooled, slice open and scoop out into the bowl along with 1 egg and vanilla extrct

4. Begin heating nonstick spray or 1 tbsp of butter of medium heat in large pan

5. Mix the patties into golf ball size figures and then flatten into pancakes about 1/2 inch thick

6. Once pan is heated add the pancakes and cook until lightly browned and then flip (about 3 minutes on each side)
