Mexican Style Stuffed Peppers

Mexican Style Stuffed Peppers

 Serving Size (4 servings)

  • Red Bell Peppers - 4, slice in half (seeds and stems removed)
  • Lean Ground Turkey - 1 lb. 
  • Red Onion - 1, diced
  • Cauliflower Rice - (chop and blend 1 small head)
  • Black Beans - 1, 15.5 oz. can
  • Jalapeño - 1, diced
  • Chili Powder - 1 tbsp.
  • Oregano - 1/2 tbsp.
  • Paprika - 1/2 tsp.
  • Cayenne - 1 tsp.
  • Garlic - 2 cloves, minced
  • Cotija Cheese - 1/4 cup, grated
  • Red Wine Vinegar - 1/4 cup
  • Vegetable Stock - 1/3 cup
  • Green Onion - 6 stalks, chopped finely
  • Lime - 2
  • EVOO - 2 tbsp.
  • S&P

For the Avocado Crema:

  • Avocado - 1, seeded and peeled
  • Fagé Nonfat Greek Yogurt - 1, 6 oz.
  • Cilantro - 1/2 bunch
  • Garlic - 1 clove
  • Lime - Juice of 1
  • S&P

 

How to: 

1. Preheat oven to 400 degrees

2. In a large sauté pan, add 2 tbsp of EVOO

3. Once EVOO is warm, add red onion and sprinkle of salt and pepper

4. As onion begins to turn color, add minced garlic

5. Once onions has cooked through, add ground turkey, chili powder, oregano, paprika and cayenne and additional dash of salt and pepper

6. Mix the seasoning evenly and add the diced jalapeño, vegetable stock and red wine vinegar

7. Raise heat to medium-high, allowing the liquid to reduce and to be absorbed by the turkey meat (4-6 minutes)

8. Add the cauliflower rice and black beans to pan. Mix well

9. Add cheese and mix

10. In an oven-safe pan, scoop the mixture into the sliced peppers and place in oven for 5 minutes to slightly warm the pepper and brown the top of the mixture

11. Top with diced green onion and cilantro

12. Serve alongside fresh lime and avocado crema

 

For the Avocado Crema:

1.     Add all ingredients to blender or food processor

2.     Blend to desired consistency (should become similar to sour cream)
