Green Team Salad

The Breakdown: 

Serving Size - 8 to 10

  • Asparagus - 1 bunch (thin stems preferred), chopped into 3 inch pieces
  • Green Beans - 1/4 lb, chopped into 3 inch pieces
  • Frozen Peas - 1 cup, thawed
  • Turkey Bacon - 4 slices, chopped
  • Shallot - 1, medium chopped
  • Basil - 1/2 cup, chopped
  • EVOO - 2 tbsp
  • Red Wine Vinegar - 1/4 cup
  • Vegan Mayo - 1/2 cup
  • Dijon - 1/2 tbsp
  • Lemon - juice of 1/2
  • S&P

How to: 

1. Bring a small pot of water to a boil and have a large bowl filled with ice ready close by

2. Add the chopped asparagus and green beans for 1 minute. Add the frozen peas for 30 seconds and then immediately drain water and add all the greens to the bowl with the ice for 2 minutes and then add the greens to a new bowl and continue to let cool

3. While greens cool, add EVOO over medium-high heat and add shallot with dash of salt and pepper

4. As the shallot begins to soften, add the turkey bacon and cook until browned or crispy

5. Once cooked, add the turkey bacon and shallot to a bowl with the greens

6. Mix together the vegan mayo, red wine vinegar, dijon and lemon juice and then pour over the greens and bacon

7. Add the freshly chopped basil and add salt and pepper

8. Set in the fridge to one hour allowing the mixture to chill and flavors to develop

9. After one hour, mix together, taste and add any salt and pepper needed then enjoy!
