Fava Dip (Vegan)

The Breakdown: 

Serving Size - 8-12

  • Yellow Split Peas - 2 cups, rinsed
  • Red Onion - 3/4 of 1 medium onion
  • Scallions - 4, chopped
  • Garlic - 5 cloves, chopped
  • EVOO - 1/4 cup
  • Capers - 2 tbsp.
  • S&P


How to: 

1. Place split peas and 5 cups of water into a deep saucepan and bring to a boil. Skim any white foam that rises to the top as peas come to a boil (it's okay if you don't get it all)

2. Once mixture comes to a boil, add onion, scallions, garlic, thyme and bay leaves keeping heat on high

3. As the mixture comes to a boil, reduce the heat to low, cover, and let simmer for 20 minutes, stirring occasionally

4. Drain any water and remove the bay leaves, then add the peas to a blender or food processor along with EVOO, salt and pepper to taste

5. Allow to sit for 15 minutes at room temperature then top with red onion and capers

6. Serve and enjoy
