Eggplant Parm Bites

The Break Down:

(Serving Size: Approximately 12 pieces)

  • Eggplant - sliced into 1 inch pieces

  • All Purpose Flour - 1/3 cup

  • Panko Breadcrumbs - 3/4 cup

  • Eggs - 2

  • Tomato Sauce - your own or your favorite jarred brand

  • Parmesan Cheese - shredded (portion to your liking)

  • Basil - 1/2 cup fresh leaves chopped

  • EVOO or Vegetable Oil - 3/4 cup

  • Freshly Ground Black Pepper

How to:

1. Set aside 3 plates - one for your flour, the second for your eggs and third for panko

2. Turn oven to broil and in a deep saute pan, add EVOO and raise to medium-high heat

3. As oil heats up, dip the eggplant slices one by one on both sides into the flour, then eggs, then panko

4. As each eggplant piece is coated, add to the oil and let brown on both sides (about 3 minutes)

5. After the eggplant has browned on both sides, add to a sheet pan

6. Once all eggplant is added to the sheet pan, cover the tops with tomato sauce and cheese

7. Place in the oven on broil for 2 minutes and/or until the cheese has melted

8. Top with basil and freshly ground black pepper and serve immediately
