Chickpea "Tuna" Salad

Chickpea "Tuna" Salad

The Breakdown: 

Serving Size - 2

  • Chickpeas - 1, 15 oz. can
  • Red Onion - 1/2 of 1 small onion, chopped
  • Scallions - 2, diced
  • Celery - 1 stalk, diced
  • Vegan Mayo - 2 tbsp
  • Dijon Mustard - 1/2 tbsp
  • Lemon - Juice of 1/2
  • Garlic Powder - 1/2 tsp
  • Celery Root - 1/2 tsp
  • Paprika - 1/4 tsp
  • S&P - to taste

 

How to: 

1. Rinse and drain the chickpeas and then place in large bowl and begin to mash with the backside of a fork

2. Add all remaining the remaining ingredients, continuing to mash chickpeas to desired texture

3. Season with salt and pepper to desired taste

 

Tips & Tricks:

  • Serve on a slice of toasted Ezekiel bread or create your own lettuce wrap with butter lettuce
