The Breakdown: 

Serving Size - 8 bowls

  • White Lean Ground Turkey - 2 lbs.
  • Brown Rice - 1 cup
  • Corn - 1, 16 oz. can
  • Black Beans - 1, 16 oz. can
  • Cilantro - 1/2 bunch, chopped finely
  • Lime - 1
  • Bay Leaves - 2
  • Cumin - 1 tbsp
  • Coriander - 1 tbsp
  • Chili Powder - 1/2 tbsp
  • Cayenne - 1/2 tsp
  • Onion Powder - 1 tbsp
  • Oregano - 1 tsp
  • Red Wine Vinegar - 1/4 cup
  • Worcestershire - 2 tbsp
  • Unsalted Butter - 2 tbsp
  • EVOO - 2 TBSP
  • S&P

 

Salu's Tomatillo Salsa Recipe

Salu's Pico De Gallo Recipe

 

How to: 

1. Add 1 cup of brown rice and 2 cups of water into a pot, along with 1 tbsp of butter and bay leaves. Bring pot to boil and and then cover for 45 minutes

2. Remove rice from pot, along with bay leaves and pour into large dish and add chopped cilantro, juice of 1/2 of a lime. Add the additional tablespoon of butter and season with salt and pepper, then mix and set aside

3. Add 2 tbsp of EVOO into large pan over medium-high heat and once fragrant, add the ground turkey

4. Season with cumin, coriander, chili powder, cayenne, onion powder, oregano, salt and pepper and mix

5. As the turkey begins to brown, add red wine vinegar, Worcestershire and black beans to the pan and continue to mix occasionally until browned and cooked through

6. Create a bowl with the brown rice as the base and then add ground turkey, corn, salsas and serve with a fresh lime wedge
