The Breakdown: 

Serves about 8-10

  • Ciabatta Bread - 1 loaf, cut horizontally
  • Cherry Tomatoes - 2, 12 oz containers, sliced in half
  • Burrata Cheese - 8 oz
  • Arugula - 1 cup
  • Basil - 3/4 cup, chopped
  • Balsamic Vinegar - 2.5 tbsp
  • Garlic - 1 clove
  • Lemon Zest - Zest of 1
  • EVOO - 1/4 cup
  • S&P


How to: 

1. Preheat oven to 400 degrees

2. In a bowl, mix together the halved tomatoes, balsamic, basil, arugula, salt and pepper

3. Drizzle the sliced ciabatta with half of the EVOO and rub the garlic clove along both sides

4. Once oven has reached desired heat, add the sliced ciabatta to top shelf for 3-5 minutes or until lightly golden brown. While bread is in the oven, slice up the garlic clove and mix into the tomato mixture

5. Remove the bread from oven and top first with the burrata cheese and then the tomato mixture

6. Add the lemon zest and sprinkle with salt and pepper

. Serve immediately and enjoy
