Autumnal Sheperd's Pie

 

The Breakdown: 

Serving Size - 6-8

  • Extra Lean Ground Turkey - 2 lbs.
  • Sweet Onion - 1 small, chopped
  • Carrot - 1, chopped finely
  • Celery - 2 stalks, chopped finely
  • Corn - 1/2 cup (frozen and dethawed or canned)
  • Sweet Peas - 1/2 cup (frozen and dethawed or canned)
  • Sweet Potato - 2 medium
  • Walnuts - 1/8 lb., crushed
  • Pumpkin - 1, 15 oz. can
  • Garlic - 3, chopped
  • Tomato Paste - 1, 6 oz. can
  • Vegetable Stock - 1.5 cups
  • Worcestershire - 2 tbsp.
  • Maple Syrup - 1/4 cup
  • Coconut Milk - 1 cup
  • Thyme - 1 tsp
  • Fennel - 1/2 tsp
  • EVOO - 3 tbsp.
  • S&P

 

How to: 

1. Bring a large pot of salted water to a boil

2. Add sweet potatoes and cook until tender (about 20-30 minutes)

3. While sweet potatoes cook, dice the onion, celery, carrots and garlic and set aside

4. Allow the sweet potatoes to cool and then remove skins

5. Add 1 tbsp. of EVOO over medium heat, add the sweet potatoes, season with salt and pepper

6. Raise heat and add half of the coconut milk and mix continuously, allowing the sweet potatoes to absorb the coconut milk

7. As the coconut milk begins to become absorbed, add the pumpkin puree, the rest of the coconut milk and maple syrup

8. Continue to stir and cook over medium high heat for 5-7 minutes. Once smooth, set aside

9. Preheat oven to 400 degrees

10. In the same sauté pan, add the walnuts. As they become fragrant, remove from heat and set aside

11. Add 2 tbsp. of EVOO to the same sauté pan and add the onion, celery and carrot and season with salt and pepper

12. As the vegetables start to cook down, add the chopped garlic and mix

13. As onions begin to turn translucent, add half of the vegetable broth and raise heat

14. As the vegetable broth begins to become absorbed, add the ground turkey, salt, pepper, thyme, fennel and mix

15. Add the rest of the vegetable broth, tomato paste and Worcestershire, then mix

6. Once ground turkey is cooked through - add the meat to a deep sauté pan, then top with sweet potato/pumpkin mix

17. Place the pan into the oven for 5 minutes and while in the oven, crumble the walnuts

18. Remove the pan from oven and top the crumbled walnuts

9. Serve and enjoy
